Deep Fried Lobster Tails

I'm crazy about lobster. Here's a recipe where you dip your lobster tails in a batter and deep fry it, locking all the juicy, sweetness of the lobster inside! This was such a wonderful way to prepare lobster! Since I'm in South Dakota it's hard to find fresh seafood, but we found these beautiful lobster tails at Sam's Club. They were delicious! I served them on a bed of Asian Slaw.
Here's all you need! Just equal parts of all purpose flour, rice flour, a pinch of baking soda and a cup of 7up! Oh, and a couple of lobster tails!
To butterfly the tails, simply take your kitchen shears, and cut down the middle of the shell, starting at the opposite end of the tail....but stop cutting just before you reach the tail.
Gently pull the shell apart and pull the meat up and over the shell, resting the meat on top of the shell.
It should look something like this!
Whisk 1/2 cup each of the rice flour and all purpose flour together, with a pinch of baking soda, and 1 cup of 7UP. Mix well.
Dip the lobster in the batter, making sure to get the batter all over and under the meat.
And now it's all battered up and ready for the hot fryer!
It only takes about 5 minutes! Fry to a nice golden color!
And here is the finished product! SO YUMMY! Serve with clarified butter.
This would be a wonderful dish to prepare for Valentines Day! It's so decadent and special!

Honey Ginger Hot Wings


I got the inspiration for this recipe while on a trip to the Island of St. Kitts. We met a man who owned a little shack on the beach and he served these wings and told me how to make them. I think the secret is the fresh grated ginger! This is a wonderful way to make chicken wings for the big game coming up! Super easy and AMAZING flavor!
Honey Ginger Hot Wings
2 Tablespoons flour
1 teaspoon salt
1 teaspoon fresh ground pepper
1/4 teaspoon five-spice powder
2 lbs. chicken wings
2 1/2 Tablespoons red hot sauce (I like Frank's Red Hot)
2 tablespoons butter (melted)
1/2 tablespoon soy sauce
2 tablespoons honey
2 tablespoons fresh grated ginger
2 tablespoons sliced green onions or scallions
Preheat oven to 500 degrees. Line a large baking sheet with foil and spray with vegetable oil. In a small bowl mix flour, salt, pepper and five-spice powder. Add the chicken and toss to coat. Spread the chicken on the baking sheet in a single layer and spray with vegetable oil. Roast the chicken for 40-45 minutes, turning at least once, until brown and crispy.
In a bowl whisk together hot sauce, butter, soy sauce, honey and grated ginger. Add chicken to the sauce and toss. Sprinkle with green onions, and they are ready!!!!

Spicy Maple Chicken Wings

 Chicken Wings are so easy to make and fun to eat! I LOVE Frank's Red Hot Cayenne Pepper sauce! It's just the best! These wings are first baked, and then deep fried for a little extra crispiness and very juicy and delicious after they are tossed in a combinations or melted butter and Frank's!
MMMMMM! MMMMM!! Nothing goes better with football than chicken wings!

Spicy Maple Chicken Wings

Ingredients
12 chicken wings
salt and pepper to taste
Oil for frying (Canola, peanut or vegetable)
1/2 cup butter, cubed
1 cup Frank's Red Hot Cayenne Pepper Sauce
1/4 cup maple syrup
Instructions:
Preheat oven to 375. On a large baking sheet, spray with vegetable oil--or even better use parchment paper. Place wings on the baking sheet, season with salt and pepper. Bake for about 20-25 minutes.
Heat a large dutch oven filled with vegetable oil, (enough to fully submerge chicken) to about 350-375 degrees. Or if you have a deep fryer with a basket, heat oil.
While oil is heating and chicken is baking, melt cubed butter in a small saucepan. Stir in maple syrup and cayenne pepper sauce, stirring constantly. Bring to a boil. Remove from heat.
After chicken has baked, fry in heated oil for few minutes until they are golden brown. Let drain. Toss in the butter/cayenne pepper sauce mixture, shake off excess sauce and transfer to a serving platter. Serve with blue cheese or ranch dressing is desired.

With the big game coming up this weekend, here's a really great recipe for Garlic Parmesan Chicken wings! These are baked first, then deep fried. You can make a variety of flavors if you want, since you toss the wings in the sauce at the very end. Very quick and easy to make!

Garlic Parmesan Chicken Wings

Ingredients:
12 uncooked chicken wings
salt and pepper to taste
3 tablespoons butter, melted
2 teaspoons dried basil
2 garlic cloves, minced
1/4 cup grated Parmesan cheese
1/2 teaspoon seasoned salt (Like Lawry's)
Oil (Canola, peanut or vegetable)

Bacon Wrapped Pineapple Bites

If you are having or going to a Superbowl party and want a simple recipe, here it is!!! Who doesn't love pineapple?? Especially when it's wrapped in BACON--sprinkled with brown sugar and baked into a sweet, juicy, salty, crispy goodness! Each bite tastes like candy!
SOOOOO GOOOOOOD!!!!!!!! You can use canned pineapple to save time, but fresh pineapple always tastes better!
Start by cutting the skin off the fresh pineapple, (don't use the core, because it's tough and doesn't taste as good) Cut the top and bottom of the pineapple. Stand the pineapple up and cut the skin off in strips.
Just slice off long pieces, discarding the core.
cut into small chunks.
cut a pound of bacon in half.
Wrap a piece of bacon around a chunk of pineapple and secure with a toothpick. I used a sheet of parchment paper to cook them on. If you have a rack that will raise the bacon wrapped pineapples away from the pan so they don't sit in all that grease that the bacon produces, use it! I don't have one. But they still turned out wonderful!
After all the bacon is used, then sprinkle each bite with brown sugar.
Place in a preheated 375 degree oven for about 20 minutes. If the bacon is still soft after 20 minutes, heat under the broiler on low for a few more minutes, watching carefully so the bacon doesn't burn.
Your guests will love these! Both kids and adults love these! Enjoy--they won't last long!

Bacon Wrapped Pineapple Bites

Ingredients:
1 whole pineapple, cored and cut into chunks (or canned will work too)
1 pound of bacon, cut in half
2-3 tablespoons brown sugar
Instructions:
Preheat oven to 375 degrees. Wrap each chunk of pineapple in a half slice of bacon, trim off any excess fat from the bacon. Secure with a toothpick.
Place on a wire baking rack or a sheet pan lined with parchment paper. Sprinkle with brown sugar. Place the pineapple bites in the oven and bake for about 20 minutes. If needed, place under the broiler for a few minutes to brown the bacon even more. Watch closely so they won't burn.
Let cool slightly, and serve!

Swedish Meatballs

Nothing beats these homemade meatballs, smothered in a creamy sour cream brown gravy. The meatballs are a combination of beef and pork, gently spiced with nutmeg and allspice. You can serve them as an appetizer or over a bed of noodles. They are so delicious!


Swedish Meatballs

Ingredients:
For the meatballs:
2 tablespoons olive oil
1 medium onion, diced
1 pound of ground beef
1 pound of ground pork
1/2 cup bread crumbs
2 large eggs
1/4 teaspoon allspice
1/4 teaspoon nutmeg
salt and freshly ground pepper- to taste
For the gravy:
1/4 cup butter
1/3 cup flour
4 cups of beef broth
3/4 cup sour cream
salt and freshly ground pepper- to taste
2 tablespoons fresh chopped parsley (optional)
Instructions:
Heat 1 tablespoon of the olive oil in a large skillet. Add onion, stir and cook until onions are tender and translucent. (About 3 minutes)
In a large bowl, mix together beef and pork, bread crumbs, eggs, allspice, nutmeg and cook onion. Season with salt and pepper. Blend well. Roll the mixture into 1 1/4-1 1/2 inch meatballs. In the skillet that you cook onions in, cook meatballs in batches, frying until all the side are brown, about 4 or 5 minutes. Transfer to a plate lined with paper towels.
To make the gravy :
When meatballs are all cooked, drain the grease from the skillet. Add butter. Let melt. Whisk in flour until lightly browned, about 1 minute. Slowly whisk in beef broth and cook, whisking constantly, until slightly thickened. Stir in sour cream, season with salt and pepper, to taste.
Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8- 10 minutes.
Serve immediately alone as an appetizer or over a bed of egg noodles or pasta. Garnish with parsley, if desired.

Bacon Cheeseburger Dip


Bacon Cheeseburger Dip
Ingredients
1/2 pound ground beef
8 bacon strips (cut into chunks)
1/2 diced onion
1 clove garlic - chopped
4 ounces cream cheese (softened)
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup mozzarella, shredded
1/2 cup cheddar cheese, shredded
Instructions
Pre-heat oven to 350 degrees F.
Cook ground beef then drain.
Cook bacon until crispy (drain but keep 1 1/2 tablespoons grease in pan).
Saut onion and garlic in grease. In a large bowl mix the cream cheese, sour cream, mayonnaise, cheeses, Worcestershire and ketchup.
Add beef, bacon, onions and garlic to mixture above and stir until combined.
Pour into baking dish and bake for 15-20 minutes
