Creamy Parmesan Artichokes and Mushrooms (Hearts n' Caps)

Ingredients:
2 cans (16 oz.) artichoke hearts (not marinated) drained and quartered
1 lb. fresh sliced mushrooms
1 cup heavy cream
2 tablespoons butter
1 cup Parmesan cheese, divided
Instructions:
Preheat oven to 350 degrees. Arrange artichoke hearts in a 1- 1/2 quart baking dish. Sprinkle half of the Parmesan cheese over artichokes. 
 In a medium sized skillet, add mushrooms and cook until tender. Add cream. Cook over medium heat, stirring occasionally, until most of the cream is absorbed. Pour mushroom mixture over artichoke hearts. Sprinkle with remaining Parmesan cheese. Bake for 30 minutes.

Philly Cheese Steak Dip

Philly Cheese Steak Dip 

 

Ingredients:
1 1/2 cups  shoulder steak, cut thin and chopped
2 tablespoons olive oil
Montreal steak seasoning, to taste
1 cup diced onion
1 cup diced green pepper
8 oz. cream cheese, softened
1/2 cup mayonnaise
1 cup shredded provolone cheese (divided)
Instructions:
Heat olive oil over medium heat in a large skillet. Season steak with Montreal Seasoning, and pan fry until done. Cut in thin slices, then chop into small bits. Remove from pan and set aside. In same pan, add more oil if needed. Saute onions and peppers until soft. 
In a medium bowl, mix cream cheese, mayo, 1/2 cup provolone cheese, and chopped steak. Stir until well combined. Add sauteed onion and green pepper to bowl. Place mixture in a baking dish. Top with the remaining provolone cheese. Bake at 350 degrees for 25 minutes. 
Serve with chips or toasted baguettes.

This is an amazing way to cook a steak! If you don't have a cast iron skillet, get one! I use mine for so many things. I found my skillet in a flea market for only $12.The cool thing about cast iron, it goes from stovetop to oven to grill with such ease! And you can bake a gooey upside-down cake in it as well as fry unbelievably crisp chicken! You'll never cook steaks another way after trying this recipe.

Sausage and Pepper Skillet Frittata

A frittata is basically a crust-less quiche, or an Italian omelet.  You can use just about anything you have on hand to make one. I was running low on eggs, it would have been better with more eggs, but it was still delicious!  Have fun with it, add the ingredients that you love like spinach, kale, olives, mushrooms, potatoes, whatever you have on hand! 
I do recommend a cast-iron or oven-safe non-stick skillet.... stainless steel pans will work, but you'll need extra oil to make sure the eggs don't stick to the pan. 
Ingredients:
1 tablespoon olive oil
1 lb. sausage
1/2 medium onion, chopped
1 red bell pepper
1 yellow bell pepper
1 clove garlic, minced
8 eggs
1/4 cup water
salt and pepper to taste
1 1/2 cups  shredded Monterrey Jack cheese 
Instructions:
Preheat oven to 350 degrees. In a oven-safe skillet, heat oil over medium heat, add sausage. Brown. Add onions and peppers, cooking until tender. Add garlic. Cook for another 2 minutes. In a medium bowl whisk together eggs, water, salt and pepper. Pour  the eggs in skillet and evenly distribute the sausage and peppers throughout the eggs. Do not stir. Once the eggs set on the bottom and around the sides of the pan, top with shredded cheese and place the pan in the preheated oven for about 25 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

This is an amazing recipe. My husband and I have been watching our carb intake, and this is almost just like a creamy potato bake, but it's CAULIFLOWER, and it's delicious! And you can make it ahead of time and place it in the refrigerator until ready to bake.

Cheesy Cauliflower Bake

Ingredients:
1 large head of cauliflower
1 8 oz. cream cheese
1/2 cup butter
1 1/4 cups shredded cheddar cheese
6 slices cooked bacon, crumbled
chopped greed onions
salt and pepper to taste
Instructions:
Cook cauliflower in lightly salted water until soft. Cook bacon until crispy and crumble into small pieces. Drain water from cauliflower, return to pot. Add cream cheese and butter and mash until creamy. Pour into 9 x 13 baking dish. Top with shredded cheese, chopped green onion, and bacon. Bake at 350 for 24-30 minutes.

How To Make Brussels Sprout Chips
With the new year here, you're probably trying to eat healthier to get rid of any weight you might have gained over the holidays. These are so delicious and very simple to make. AND HEALTHY! They have a little crunch to them too! I love them! Here's how to make them:
Ingredients:
1 lbs. fresh Brussels sprouts
3 tablespoons olive oil
1 teaspoon sea salt
Instructions:
Preheat oven to 350 degrees. Rinse off Brussels sprout and then remove the leaves from them. You might need to keep cutting the stem as you get deeper into the sprout.
Place the leaves on a baking sheet and drizzle olive oil over them, then toss to coat. Spread leaves evening over the baking sheet. Sprinkle with sea salt.
Bake, turning the leaves until browned and crunchy. Drain on a paper towel lined platter.

Ingredients:
2 large ripe avocados, pitted, peeled and mashed
2 Roma tomatoes, finely chopped
2 shallots, finely chopped
1 garlic clove, minced
1 (4.5 oz) can green chilies
1 and 1/2 tablespoons lime juice
salt and pepper to taste
tortilla chips for dipping
Instructions:
Mix all ingredients except tortilla chips in a glass or plastic bowl. Cover and refrigerate for at least 1/2 an hour so flavors can blend. Serve with tortilla chips.
