Mini Orea Cookie Cheesecakes!

Mini Oreo Cookie Cheesecakes!
Who doesn't love cheesecake?? Especially when it's paired with Oreo cookies!! These delicious mini Oreo Cookie Cheesecakes are easy to make and travel well. These would be great for a bridal shower or a baby shower.
You start by placing cupcake liners into the pan and dropping an Oreo Cookie in the bottom.
In a large mixing bowl, with a mixer, beat the cream cheese until it's smooth. Add sugar, beaten eggs and vanilla. Mix well. Next add sour cream and salt. Mix well well until smooth. It should look like this.

Spoon the mixture into the lined muffin pans until they are about 2/3 of the way full.
Top each cheesecake with coarsely chopped Oreo cookies. Bake at 275 degrees for about 23-25 minutes or until set. Let cool completely then refrigerate for about 2 hours before serving.
They are so fun and easy to make and REALLY easy to eat!

INGREDIENTS:
Oreo cookies (18 whole cookies and 8 to chop)
2 (8 oz). packages of cream cheese, room temperature
1/2 cup sugar
2 eggs, slightly beaten
1 tsp. vanilla extract
1/8 tsp. salt
1/2 cup sour cream
cupcake liners
Preheat oven to 275, place cupcake liners into muffin pans, then place and Oreo cookie in the bottom of each one. In a large mixing bowl, beat the cream cheese until smooth. Add sugar, eggs and vanilla. Add sour cream and salt. Mix well. Spoon the mixture into each lined muffin tin, until they are about 2/3 full. Place extra oreos into a plastic bag and pound until they are in course pieces. Add to the top of each cheesecake. Bake for about 23-25 minutes or until the cheesecake has set.
Let cool and refrigerate for at least 2 hours before serving
